Ramen is usually prepared in hot soup. However, when the weather is very hot, some of us may prefer something cooler. Similar to soba, though less prominent, ramen also has a chilled counterpart. This recipe is great to be served as a salad or as a main course if you want something light.
What You Need:
- 2 package ramen noodles
- 2 small cucumbers
- 3 chicken tenderloins
- sesame sauce
- white sesame (optional)
What To Do:
- Marinate the chicken with salt for 30 minutes. Add some vegetable or olive oil in the water and boil the ramen until tender. Drain the water and let them sit in the fridge for 20 minutes.
- Boil the chicken tenderloins for a few minutes until cooked. Shred the chicken and cucumber.
- Remove the noodles from the fridge. Toss them in some sesame sauce.
- Top the noodles with shredded chicken and cucumber. Pour another layer of sesame sauce on top. Sprinkle some sesame on top (optional).
