Chinese New Year is just around the corner. If you are inviting guests over for a chinese style dinner, this would be a great simple dish to serve your guests. You can even use the leftover lotus root to garnish the dish. Just thinly slice the leftover lotus root and deep fry it in warm oil until it turns light golden brown. Sprinkle a bit of salt on top of the chips and you are done!
Ingredients:
300g minced pork
100g finely diced lotus root
3 tablespoon of chopped spring onions
3 tablespoon of diced mushroom
2 tablespoon of shrimp paste
1 tablespoon of soy sauce
3 tablespoon of chopped dried shrimp
1 cup cornstarch
Directions:
1. Mix minced pork, diced lotus root, chopped spring onions, diced mushroom, chopped dried shrimp, soy sauce and shrimp paste, stir well until sticky
2. Form the minced pork mixture into small meat cake evenly and coat with cornstarch on the surface
3. shallow-fry in a pan with some hot oil at low heat until cooked and golden on both sides
